Ingredients

4 large bell peppers (any color of your choice)

2 cups elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup cream cheese, softened to room temperature

1 cup milk (whole milk recommended for creaminess)

2 tablespoons unsalted butter

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional, for a spicy kick)

Salt and black pepper to taste

1/2 cup panko breadcrumbs

Fresh parsley, chopped (for garnishing)

Instructions

Preheat the oven: Set your oven to 375°F (190°C) to preheat while you prepare the ingredients.

Prepare the bell peppers: Carefully slice the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outer skins with olive oil to encourage a golden color as they bake. Stand the peppers upright in a baking dish, providing a snug fit to keep them from tipping over.

Cook the elbow macaroni: Bring a large pot of salted water to a vigorous boil. Add the elbow macaroni and cook according to package instructions until al dente. Once cooked, drain the pasta and set it aside, allowing it to cool slightly.

Create the cheese sauce: In a medium saucepan over medium heat, melt the unsalted butter. Once melted, add the softened cream cheese, stirring until it’s completely smooth. Gradually pour in the milk, whisking continuously to combine everything well.

Incorporate spices and cheese: Into the cheese mixture, add the garlic powder, onion powder, paprika, cayenne pepper (if using), salt, and black pepper. Stir until the mixture is evenly seasoned. Slowly add in the shredded sharp cheddar cheese, stirring until it melts completely and forms a creamy sauce.

Mix macaroni with the cheese sauce: Add the cooked elbow macaroni to the cheese sauce in the saucepan, stirring gently until the pasta is fully coated with the luscious cheese mixture.

Stuff the prepared peppers: Using a spoon, generously fill each bell pepper with the macaroni and cheese mixture. Press down gently to pack the filling firmly into each pepper, ensuring it's well-stuffed.

Prepare the breadcrumb topping: In a small bowl, combine the panko breadcrumbs with a drizzle of olive oil, adding a pinch of salt and pepper. Mix until the breadcrumbs are evenly coated. Generously sprinkle this mixture over the tops of the stuffed peppers, creating a crunchy layer.

Bake to perfection: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes to soften the peppers. After this time, remove the foil and continue baking for an additional 10-15 minutes or until the tops are nicely golden and crispy.

Garnish and serve: Once baked, take the dish out of the oven and allow it to cool for a few minutes. Just before serving, sprinkle garnished chopped parsley over the peppers for a pop of color and freshness.
