2 cups frozen hash browns, thawed

1 cup shredded cheddar cheese, divided

6 large eggs

¼ cup milk

½ tsp salt

¼ tsp black pepper

1 tsp garlic powder

½ cup diced bell pepper (any color)

½ cup diced cooked ham or cooked sausage (optional)

Fresh chives or green onions, chopped, for garnish

Instructions
 

Preheat the Oven: Set your oven to 425°F (220°C) to preheat while you prepare the hash brown cups.

    Prepare the Hash Brown Base: In a mixing bowl, combine the thawed hash browns with half of the shredded cheddar cheese, salt, pepper, and garlic powder. Mix thoroughly until every ingredient is evenly distributed.

      Shape the Cups: Lightly grease a muffin tin with cooking spray or butter. Take a portion of the hash brown mixture and press it firmly into the base and up the sides of each muffin cup, creating a cup shape. Aim for about ¼-inch thickness for even cooking.

        Bake the Hash Brown Cups: Place the muffin tin in the preheated oven and bake for approximately 20 minutes, or until the hash brown cups are golden brown and crispy on the edges.

          Prepare the Egg Mixture: While the hash brown cups are baking, crack the eggs into a separate bowl. Add the milk, diced bell pepper, and diced ham or sausage (if using). Season the mixture with a pinch of salt and pepper, then whisk until well blended.

            Fill the Cups: Once the hash brown cups are done baking, remove the tin from the oven. Carefully pour the egg mixture into each cup, filling them almost to the top, allowing some space for the eggs to expand as they cook.
