Ingredients

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

2 large eggs

Zest of 2 lemons

1/3 cup freshly squeezed lemon juice

1 teaspoon vanilla extract

1 cup powdered sugar (for glaze)

2 tablespoons lemon juice (for glaze)

Optional: Lemon zest for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare an 8x8-inch baking pan by greasing it lightly and lining it with parchment paper. Make sure to leave some parchment hanging over the edges to facilitate easy removal after baking.

Prepare the Crust/Base: In a medium mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Use a whisk to mix the dry ingredients thoroughly. Next, add the melted unsalted butter, large eggs, lemon zest, freshly squeezed lemon juice, and vanilla extract into the bowl. Stir gently until everything is just combined. Note that the batter will be thick and creamy. Transfer the mixture to the prepared baking pan, spreading it out evenly with a spatula.

Bake the Squares: Place the baking pan in the preheated oven and bake for 20-25 minutes. The edges should turn a light golden brown, and a toothpick inserted into the center should come out clean. Once baked, remove the pan from the oven and allow the squares to cool in the pan for about 10 minutes.

Prepare the Glaze: While the squares are cooling, whisk together the powdered sugar and the 2 tablespoons of lemon juice in a small bowl until the mixture is smooth and free of lumps. If you prefer a thinner glaze, simply add a bit more lemon juice. For a thicker consistency, incorporate additional powdered sugar.

Glaze the Squares: After the lemon squares have cooled slightly, pour the prepared glaze over the top. Use a spatula or the back of a spoon to spread the glaze evenly across the surface. Let the glazed squares sit for about 15-20 minutes to allow the glaze to set.

Garnish and Serve: For an extra zing of color and flavor, sprinkle some fresh lemon zest over the glaze before serving. Once set, cut into squares of your desired size and arrange on a serving platter.

Prep Time: 15 mins | Total Time: 1 hr | Servings: 16 squares

                - Presentation Tips: Serve the squares on a decorative platter, garnished with a few lemon slices and fresh mint for an inviting look.
