Ingredients

1 cup rolled oats

1 cup almond butter (or any nut/seed butter of your choice)

¼ cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon ground ginger

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon ground cloves

¼ teaspoon sea salt

¼ cup molasses

½ cup finely chopped walnuts (or pecans)

¼ cup mini dark chocolate chips (optional)

Extra oats for rolling (optional)

Instructions

Combine Wet Ingredients: In a large mixing bowl, blend together the almond butter, honey (or maple syrup), vanilla extract, and molasses. Use a spatula or spoon to stir well until all ingredients are completely combined and smooth.

Mix Dry Ingredients: In another bowl, whisk together the rolled oats, ground ginger, ground cinnamon, ground nutmeg, ground cloves, and sea salt. Ensure the spices and oats are evenly distributed throughout.

Combine Mixtures: Gradually pour the dry mixture into the wet mixture, stirring continuously until everything is thoroughly mixed. The texture should be thick and slightly sticky, making it easy to mold.

Add Extras: Carefully fold in the finely chopped walnuts (or pecans) and dark chocolate chips, if using. Make sure they are evenly incorporated into the mixture for a delightful crunch in every bite.

Chill the Mixture: Cover the bowl with plastic wrap or a lid and refrigerate for about 30 minutes. Chilling will help the mixture firm up, making it easier to shape.

Form Energy Bites: After chilling, use a tablespoon to scoop out portions of the mixture. Roll each portion between your palms to create uniform balls. If you like, roll the balls in extra rolled oats for an added texture and presentation.

Store Appropriately: Place the formed energy bites in an airtight container. They can be stored in the refrigerator for up to two weeks for a quick snack. Alternatively, freeze them for longer-term storage.

Prep Time, Total Time, Servings: 15 minutes | 1 hour (including chilling) | Makes about 15-20 energy bites.

                  - Presentation Tips: Arrange the energy bites on a decorative plate or in a clear glass jar for a beautiful display. Garnish with a sprinkle of cinnamon or a few whole nuts for an added touch of elegance.
