Ingredients

4 medium-sized Russet potatoes

1/4 cup unsalted butter, melted

4 cloves garlic, minced

1/2 cup freshly grated Parmesan cheese

1 tablespoon fresh rosemary, finely chopped

1 teaspoon sea salt

1/2 teaspoon freshly cracked black pepper

1/2 teaspoon smoked paprika (optional for extra flavor)

2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a baking tray with parchment paper to prevent sticking and make cleanup easier.

Prepare the Potatoes: Rinse the potatoes thoroughly under cold water, scrubbing off any dirt. Pat them dry with a kitchen towel. Place each potato on a cutting board. Using a sharp knife, carefully make thin slices, about 1/8 inch apart, down the length of each potato, stopping just before you cut through to the bottom. To help guide your knife and prevent cutting all the way through, position chopsticks or wooden spoons on either side of the potato.

Make the Garlic Butter Mixture: In a small mixing bowl, combine the melted butter with the minced garlic, chopped rosemary, sea salt, black pepper, and smoked paprika (if desired). Mix everything together until well incorporated.

Coat the Potatoes: Using a pastry brush, generously coat each potato with the garlic butter mixture, ensuring to get some in between the slices for maximum flavor. Set aside a small amount of the garlic butter mixture for basting later.

Bake the Potatoes: Arrange the prepared potatoes on the lined baking tray. Cover them with aluminum foil to allow them to steam and cook evenly. Place the tray in the preheated oven and bake for 30 minutes.

Add Cheese and Continue Baking: After 30 minutes, carefully remove the foil. Baste the potatoes with the reserved garlic butter mixture, then sprinkle the grated Parmesan cheese generously over the top. Place the potatoes back in the oven, uncovered, and bake for an additional 25-30 minutes. They are done when the tops are golden brown and crispy, while the insides are tender.

Garnish and Serve: Once the potatoes are baked to perfection, take them out of the oven and let them cool for a few minutes. Before serving, sprinkle with chopped fresh parsley for a pop of color and flavor.

Enjoy Your Creation: These Garlic Parmesan Hasselback Potatoes make for a delightful side dish or a scrumptious snack that will impress your family and friends!
