Ingredients

1 pound fresh asparagus, trimmed

3 tablespoons extra virgin olive oil

3 cloves of garlic, finely minced

Zest of 1 large lemon

Juice of 1 large lemon

1 teaspoon sea salt

½ teaspoon freshly cracked black pepper

¼ teaspoon red pepper flakes (optional for heat)

2 tablespoons freshly grated Parmesan cheese (optional for added richness)

Fresh parsley, finely chopped (for vibrant garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to ensure it's hot enough for roasting the asparagus.

Prepare the Asparagus: Rinse the asparagus spears under cold running water and gently pat them dry with a clean cloth. To trim, hold each spear in your hands and bend it until it snaps at its natural breaking point, removing the tough, woody ends.

Make the Marinade: In a medium-sized bowl, vigorously whisk together the extra virgin olive oil, minced garlic, lemon zest, freshly squeezed lemon juice, sea salt, black pepper, and red pepper flakes (if you prefer a bit of spice). The marinade should be well blended for even flavor distribution.

Coat the Asparagus: Transfer the trimmed asparagus into a large mixing bowl. Drizzle the prepared garlic lemon marinade over the asparagus and gently toss the spears until they are fully coated in the flavorful mixture.

Arrange on the Baking Sheet: Line a baking sheet with parchment paper for easy cleanup. Spread the marinated asparagus across the sheet in a single layer, ensuring they are not overcrowded to allow for optimal roasting.

Roast the Asparagus: Place the baking sheet in your preheated oven and roast the asparagus for 12-15 minutes. The spears should be tender with a slight crispness on the edges. For even cooking, give them a gentle stir halfway through the roasting time.

Add Toppings: If you're using Parmesan cheese, sprinkle it over the asparagus during the last 2 minutes of roasting. This will give it a deliciously melty texture that enhances the overall flavor.

Serve: Once roasted to perfection, remove the asparagus from the oven and transfer it to a serving platter. Finish with a sprinkle of freshly chopped parsley for color and freshness. Serve warm as a delightful side dish that complements any main course!
