2 cups broccoli florets

4 tablespoons extra virgin olive oil

4 cloves garlic, finely minced

Zest of 1 lemon

Juice of 1 lemon (about 2 tablespoons)

1 teaspoon red pepper flakes (optional for spice)

1/2 cup freshly grated Parmesan cheese (plus extra for serving)

Salt and black pepper, to taste

    In a large pot, bring salted water to a rolling boil. Cook the spaghetti according to the package instructions until it is al dente. Before draining, reserve 1 cup of the starchy pasta water, then drain the pasta and set it aside.

      Blanch the Broccoli:

        Using the same pot of boiling water, add the broccoli florets. Blanch them for about 2 minutes, until they are vibrant green and tender-crisp. Using a slotted spoon, remove the broccoli and immediately plunge it into a bowl of ice water to halt the cooking process. After a couple of minutes, drain the broccoli again and set it aside.
