Ingredients

4 large ears of fresh sweet corn, husked and cleaned

3 tablespoons extra-virgin olive oil

4 cloves garlic, finely minced

1 teaspoon smoked paprika

1 teaspoon chili powder

Salt and freshly ground black pepper, to taste

2 tablespoons fresh cilantro, finely chopped

1 tablespoon fresh lime juice

8 small corn or flour tortillas

1 cup ripe avocado, diced

1 cup crumbled feta cheese (optional, for added creaminess)

Lime wedges, for serving

Instructions

Preheat the Oven: Set your oven to 400°F (200°C) to ensure it's hot and ready for roasting.

Prepare the Corn: Arrange the cleaned ears of corn on a large baking sheet to allow for even roasting.

Make the Garlic Herb Mixture: In a small mixing bowl, combine the extra-virgin olive oil, minced garlic, smoked paprika, chili powder, salt, and pepper. Whisk everything together until the mixture is well combined and fragrant.

Coat the Corn: Using a brush, evenly spread the garlic herb mixture over each ear of corn, making sure every surface is coated.

Roast the Corn: Place the baking sheet in the preheated oven and roast the corn for about 25-30 minutes, turning the ears halfway through. The corn should become tender and develop a lovely charred appearance.

Cool and Cut: After roasting, carefully take the corn out of the oven and allow it to cool for a few minutes. Once manageable, stand each ear upright and slice the kernels off the cob into a mixing bowl.

Incorporate Fresh Flavors: Add the finely chopped cilantro and fresh lime juice to the bowl of roasted corn kernels. Gently toss the mixture until well combined. Taste and adjust the seasoning with more salt or pepper if necessary.

Warm the Tortillas: While the corn mixture cools, heat a skillet over medium heat. Toast each tortilla for about 30 seconds on each side, or until they are warm and pliable.

Assemble the Tacos: Take a warm tortilla and add a generous scoop of the garlic herb roasted corn mixture. Top it with diced avocado and sprinkle feta cheese on top, if desired.

Serve and Enjoy: Finish by squeezing fresh lime juice over each taco. Serve with lime wedges on the side for an extra citrusy kick.
