1 bunch (about 1 lb) radishes, trimmed and halved

3 tablespoons extra virgin olive oil

4 cloves garlic, finely minced

1 teaspoon fresh rosemary, finely chopped

1 teaspoon fresh thyme leaves

1 teaspoon sea salt

½ teaspoon freshly ground black pepper

Zest of 1 lemon

Juice of ½ lemon

Fresh parsley, chopped (for garnish, optional)

Preheat the Oven: Start by preheating your oven to 425°F (220°C). This ensures that it's hot enough to achieve a perfect roast on the radishes.

    Prepare the Radishes: Rinse the radishes under cool water to remove any dirt. Trim off the leafy greens and cut them in half lengthwise. This cutting technique helps them roast more uniform and allows for better flavor absorption.

      Make the Herb Mixture: In a mixing bowl, combine the olive oil, minced garlic, chopped rosemary, fresh thyme leaves, sea salt, black pepper, lemon zest, and lemon juice. Whisk the ingredients together until they are well blended and the garlic is evenly distributed throughout.

        Toss the Radishes: Add the halved radishes to the herb mixture. Using a spatula or your hands, toss them thoroughly until all of the radishes are well coated with the herb and oil mixture. Ensure that every radish piece is seasoned for maximum flavor.
