1 pound (450g) large shrimp, peeled and deveined

1 cup quinoa, rinsed and drained

2 cups vegetable broth or water

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

1 teaspoon paprika

1/2 teaspoon red pepper flakes (adjust based on spicy preference)

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Lemon wedges, for serving

Instructions
 

Cook the Quinoa:

    - In a medium saucepan, combine the rinsed quinoa with 2 cups of vegetable broth or water.

      - Bring the mixture to a vigorous boil over medium-high heat.

        - Once boiling, reduce the heat to low, cover the pan, and let it simmer for approximately 15 minutes or until the quinoa is fluffy and all the liquid has been absorbed.

          - Remove the saucepan from heat and let it sit covered for an additional 5 minutes. Fluff the quinoa with a fork and set aside.

            Prepare the Shrimp:

              - While the quinoa is cooking, pat the shrimp dry thoroughly with paper towels to remove excess moisture.

                - Season the shrimp evenly with salt, pepper, paprika, and red pepper flakes to ensure they are well flavored.

                  Sauté the Shrimp:

                    - Heat a large skillet over medium-high heat and add 2 tablespoons of the unsalted butter.

                      - Once the butter has melted and starts bubbling, add the minced garlic and sauté for about 30 seconds, or until fragrant (be careful not to burn it).

                        - Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side, or until they turn a lovely pink color and are opaque throughout.
