1 pound (450g) fresh mushrooms (choose between cremini or button)

4 tablespoons unsalted butter

4 cloves garlic, finely minced

2 tablespoons extra virgin olive oil

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon fresh parsley, chopped (for garnish)

Salt and freshly ground black pepper, to taste

Juice of 1/2 lemon

Optional: 1/4 teaspoon red pepper flakes (for those who enjoy some spice)

Preheat the Oven: Set your oven temperature to 400°F (200°C). For easier cleanup, line a baking sheet with parchment paper.

    Prepare the Mushrooms: Using a damp cloth, gently wipe the mushrooms to remove any debris. Trim the stems if needed; you can keep the mushrooms whole or slice them in half if they are particularly large.

      Make the Garlic Butter: In a small saucepan, melt the unsalted butter over medium heat. Once fully melted, add in the minced garlic and fresh thyme (along with red pepper flakes if desired). Cook for approximately 1-2 minutes, stirring frequently until the garlic becomes fragrant — be careful not to allow it to brown.

        Combine and Season: Place the cleaned mushrooms into a large mixing bowl. Drizzle the olive oil and the garlic butter mixture (set aside a little for drizzling at the end) over the mushrooms. Season generously with salt and freshly ground black pepper, then toss everything together until all the mushrooms are well coated.

          Roast the Mushrooms: Spread the seasoned mushrooms out in a single layer on the prepared baking sheet. Roast in the preheated oven for about 20-25 minutes. Make sure to toss the mushrooms halfway through the cooking time to ensure they roast evenly and develop a lovely golden brown color.
