1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 cups ripe peaches, peeled and diced (about 3 medium peaches)

1 cup plain yogurt (either Greek or regular)

½ cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon pure vanilla extract

1 tablespoon fresh lemon juice

Pinch of salt

For the Topping:

½ cup granola (optional, for crunch)

Fresh peach slices, for garnish

Fresh mint leaves, for garnish (optional)

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium-sized mixing bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and ground cinnamon. Stir until the mixture resembles wet sand.

        - Press the crust mixture evenly into the bottom of a 9x9-inch baking dish. Bake in the preheated oven for 10 minutes, or until it turns lightly golden. Remove from the oven and allow the crust to cool completely.

          Make the Peach Filling:

            - In a blender or food processor, combine the diced peaches, yogurt, honey (or maple syrup), vanilla extract, lemon juice, and a pinch of salt. Blend on high speed until the mixture is smooth and creamy.

              - Taste the filling and adjust the sweetness if needed by adding more honey or maple syrup. Blend again briefly to incorporate any added sweetness.

                Assemble the Bars:

                  - Pour the peach filling over the cooled crust, carefully spreading it into an even layer using a spatula.

                      Freeze:
