Ingredients

2 cups rolled oats

1 cup Greek yogurt (plain or vanilla)

½ cup brewed espresso (cooled to room temperature)

½ cup almond milk (or your preferred milk alternative)

¼ cup honey or maple syrup

½ teaspoon vanilla extract

½ teaspoon ground cinnamon

¼ teaspoon salt

½ cup dark chocolate chips (optional)

Instructions

Prepare the Oat Base: In a large mixing bowl, combine the rolled oats, cooled brewed espresso, almond milk, Greek yogurt, honey (or maple syrup), vanilla extract, ground cinnamon, and salt. Stir vigorously until all ingredients are well incorporated and the oats absorb the liquid for a thick and creamy consistency.

Incorporate Chocolate Chips (optional): If desired, gently fold in the dark chocolate chips at this stage, ensuring they are evenly distributed throughout the oat mixture for delightful bursts of flavor in every bite.

Line Your Pan: Take an 8-inch square baking dish and line it with parchment paper, leaving some paper hanging over the edges. This will make it easier to lift the bars out once they are frozen.

Spread the Mixture: Pour the oat mixture into your lined baking dish. Use a spatula or your hands to spread it out evenly. Press the mixture down firmly to create a compact and even layer for a better texture when cut.

Freeze the Bars: Carefully place the baking dish into the freezer. Allow the mixture to chill for at least 4 hours or until it is completely frozen and firm.

Cut into Bars: Once frozen solid, remove the dish from the freezer. Use the parchment paper overhang to lift the block of oat mixture out of the baking dish. Place it on a cutting board and slice it into bars of your preferred size with a sharp knife.

Store and Serve: Store the bars in an airtight container in the freezer. For a softer texture, let them sit at room temperature for a few minutes before enjoying. Alternatively, savor them straight from the freezer for a cool, refreshing treat!

Prep Time: 15 minutes | Total Time: 4 hours 15 minutes | Servings: Approximately 12 bars

Presentation Tips: Arrange the bars on a serving platter and garnish with a sprinkle of cinnamon or a drizzle of honey for an attractive presentation. Enjoy with a cup of coffee or tea for a delightful snack or dessert!
