Ingredients

1 cup Greek yogurt (choose plain or vanilla for flavor)

2 tablespoons matcha powder (preferably ceremonial grade for the best flavor)

2 tablespoons honey or maple syrup (adjust for sweetness preference)

1 cup mixed berries (such as strawberries, blueberries, raspberries, and blackberries)

1 teaspoon vanilla extract

A pinch of sea salt

Optional: chopped nuts or granola for a crunchy coating

Instructions

Prepare the Matcha Yogurt Mixture:

In a medium mixing bowl, add the Greek yogurt, matcha powder, honey or maple syrup, vanilla extract, and a pinch of sea salt. Whisk the ingredients vigorously until the mixture is smooth and uniform in color. Ensure that the vibrant green from the matcha is evenly distributed throughout the yogurt.

      Prepare the Berries:

Rinse the mixed berries thoroughly under cool water. If you're using larger berries like strawberries, cut them into smaller, bite-sized pieces. Once washed, gently pat them dry with a paper towel to remove excess moisture.

          Assemble the Bites:

Line a mini muffin tin or silicone mold with silicone cupcake liners for easy removal. Using a spoon, fill each cup halfway with the matcha yogurt mixture. Then, place a few pieces of the prepared berries on top of the yogurt layer. If desired, use a toothpick or a small skewer to gently press the berries into the yogurt for better integration.

              Top Off the Bites:

After adding the berries, spoon more of the matcha yogurt mixture on top until each cup is filled completely. This ensures each bite is packed with flavor.

                  Freeze the Bites:

Carefully transfer the filled muffin tin or mold to the freezer. Allow the bites to freeze for at least 4 hours, or until they are solid all the way through.

                      Release and Enjoy:

Once fully frozen, gently pop the bites out from the muffin tin or silicone mold. If you’d like an extra crunch, roll each bite in chopped nuts or granola before serving.

                          Storing Leftovers:

Keep any leftover bites in an airtight container in the freezer. For optimal texture, let them sit at room temperature for a few minutes before enjoying.

Prep Time: 15 minutes | Total Time: 4 hours 15 minutes | Servings: 12 bites

                                - Presentation Tip: Serve these delightful bites on a decorative plate and garnish with a sprinkle of matcha powder or additional fresh berries for an appealing visual touch.
