Frozen Yogurt Cookie Dough Muffin Bites

1 cup all-purpose flour

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened to room temperature

½ cup packed brown sugar

¼ cup granulated sugar

1 teaspoon vanilla extract

1 large egg

1 cup mini chocolate chips

1 cup Greek yogurt (preferably plain or vanilla flavored)

2 tablespoons honey or maple syrup (for sweetening the yogurt)

½ teaspoon vanilla extract (for the yogurt)

¼ cup chopped nuts (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare a mini muffin tin by lining it with paper liners or lightly greasing each cup with cooking spray or butter.

    Mix Dry Ingredients: In a medium-sized mixing bowl, whisk together the all-purpose flour, baking soda, and salt. This will ensure that the leavening agents are evenly distributed. Set aside your dry mixture for later use.

      Cream Butter and Sugars: In a large mixing bowl, use an electric mixer to cream the softened unsalted butter with the packed brown sugar and granulated sugar. Beat the mixture on medium speed for about 2-3 minutes until it becomes light and fluffy.

        Add Wet Ingredients: To the butter and sugar mixture, add the vanilla extract and the egg. Mix until thoroughly blended and the mixture is smooth.

          Combine Mixtures: Gradually add the dry flour mixture to the wet ingredients, mixing on low speed until just combined. Take care not to overmix, as this may lead to denser muffins.                     Fill Muffins: Once muffin bites have cooled, carefully cut the tops off each muffin. Gently scoop out a small amount of the center (be sure not to go all the way through) and fill each with a generous dollop of the sweetened Greek yogurt. Cap each muffin with its cut-off top.

                      Freeze: Place the filled muffin bites in the freezer for at least 1 hour, allowing the yogurt filling to firm up.
