2 tablespoons melted coconut oil (or butter)

3 tablespoons coconut sugar (or brown sugar)

1 tablespoon ground cinnamon

1 cup Greek yogurt (plain or flavored)

1 tablespoon honey or maple syrup (optional, for additional sweetness)

Instructions
 

Preheat and Prepare:

    Begin by preheating your oven to 350°F (175°C). Prepare a mini muffin tin by lining it with paper liners or lightly greasing it with cooking spray to prevent sticking.

      Make the Muffin Batter:

        In a large mixing bowl, combine the whole wheat flour, rolled oats, baking powder, baking soda, salt, and coconut sugar. Whisk these dry ingredients together until they are thoroughly mixed. In a separate bowl, beat the egg, then add the applesauce, almond milk, and vanilla extract. Stir these wet ingredients until well blended and smooth.
