Ingredients

2 cups of plain Greek yogurt

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1 cup rolled oats

1/2 cup your favorite flavor of granola

1/2 cup mixed nuts (such as almonds, walnuts, or pecans), roughly chopped

1/2 cup dried fruits (like cranberries, raisins, or banana chips), chopped if they are large

1/4 cup chocolate chips (optional, for a sweet twist)

A pinch of salt

Parchment paper for lining the baking sheet

Instructions

Prepare the yogurt mixture: In a medium-sized mixing bowl, combine the Greek yogurt with the honey (or maple syrup), vanilla extract, and a pinch of salt. Use a whisk or spatula to blend the ingredients together until the mixture is smooth and creamy.

Incorporate the dry ingredients: Fold in the rolled oats, granola, chopped mixed nuts, dried fruits, and optional chocolate chips into the yogurt mixture. Gently stir until all the dry ingredients are thoroughly coated in the yogurt, ensuring an even distribution.

Shape the coins: Line a baking sheet with parchment paper to prevent sticking. Using a spoon or a small ice cream scoop, drop dollops of the mixture onto the parchment, pressing each scoop into a flat, round coin shape approximately 1/4 inch thick. Leave enough space between each coin as they will expand while freezing.

Freeze the coins: Carefully place the baking sheet in the freezer and allow the coins to freeze for at least 4 hours, or until they are completely solid.

Store for later: Once frozen, gently peel the yogurt coins off the parchment paper and transfer them to a zip-top bag or an airtight container. These can be stored in the freezer for up to 2 months for a tasty snack anytime!

Serve and enjoy: To enjoy, simply take out a few coins from the freezer. Allow them to sit for a couple of minutes at room temperature to soften slightly, or if you're up for it, grab one straight out of the freezer for a cool, refreshing snack!
