2 cups fresh strawberries, hulled and sliced

1/2 cup honey or agave syrup (adjust according to your sweetness preference)

1 cup plain Greek yogurt (or use a dairy-free alternative)

1 tablespoon freshly squeezed lemon juice

1 teaspoon vanilla extract

A pinch of salt

Optional: Fresh mint leaves for garnish

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries. If you’d like your bars to be sweeter, drizzle half of the honey or agave syrup over the strawberries. Let them sit for about 10 minutes to soften and release their flavorful juices.

    Blend the Mixture: In a blender or food processor, add the marinated strawberries along with the Greek yogurt, the remaining honey or agave syrup, lemon juice, vanilla extract, and a pinch of salt. Blend until the mixture is smooth, but feel free to leave a few small chunks of strawberry for added texture.

      Taste and Adjust: After blending, taste the mixture to see if it meets your preferences. If you’d like it sweeter, add more honey or agave. For a brighter flavor, consider a splash more lemon juice if desired.

        Pour into Molds: Transfer the blended strawberry mixture into silicone molds or a lined baking dish. Level the top with a spatula to ensure even distribution of the mixture in the molds or dish.

          Freeze: Place the filled molds or baking dish into the freezer. If using a baking dish, allow the mixture to freeze for about 4 to 6 hours or until it is completely solid. Silicone molds will usually take about 3 to 4 hours to freeze thoroughly.

            Unmold and Serve: Once frozen, if you used silicone molds, gently flex the molds to release the bars. If you used a baking dish, let it sit at room temperature for about 5 minutes before cutting into squares or bars with a sharp knife.

              Garnish: Serve your refreshing strawberry bars chilled, and for a pop of color and freshness, garnish with fresh mint leaves.
