2 ripe bananas

1 cup coconut yogurt (or regular yogurt for a different flavor)

1 cup canned coconut milk (for extra creaminess)

1 teaspoon vanilla extract

1/4 cup unsweetened shredded coconut

Optional: A handful of chopped nuts (such as almonds or walnuts) or fresh berries (like strawberries or blueberries) for added texture and color

Prepare the Bananas: Begin by peeling the ripe bananas and placing them into a blender. Blend the bananas on high speed until they achieve a smooth and creamy consistency, ensuring no lumps remain.

    Mix the Base: In the same blender with the banana puree, add the coconut yogurt, coconut milk, honey or maple syrup, and vanilla extract. Blend again until all ingredients are thoroughly combined and the mixture is uniform and smooth.

      Add Texture: If you opted for added texture, gently fold in the shredded coconut and any chopped nuts or fresh berries. Use a spatula to carefully stir until the mix is well distributed without over-blending.

        Pour into Molds: Carefully pour the banana-coconut mixture into ice pop molds, filling them just below the rim to allow for expansion during freezing. If you don’t have ice pop molds, you can use small paper cups instead. For cup method, insert popsicle sticks after a couple of hours of freezing, once the mixture is slightly firm.

          Freeze: Place the filled molds in the freezer, allowing them to freeze undisturbed for at least 4-6 hours, or until completely solid.

            Serve: To release the pops from their molds, run warm water over the outside of the molds for a few seconds to loosen them. Then, gently pull on the sticks to remove the pops. Enjoy these refreshing, tropical treats as a delightful snack or dessert!
