2 large ripe bananas

1 cup creamy peanut butter

1 cup dark chocolate chips

1 tablespoon coconut oil

1/2 cup chopped salted peanuts

Sea salt (for sprinkling)

Optional: 1/2 teaspoon vanilla extract

Prepare the Bananas: Peel the bananas and slice them into 1-inch thick rounds. Arrange the banana slices in a single layer on a tray lined with parchment paper.

    Create Peanut Butter Sandwiches: With a spoon, spread about 1 teaspoon of creamy peanut butter onto half of the banana slices. Place another banana slice on top of each peanut butter-covered slice to make mini sandwiches.

      Freeze the Banana Bites: Place the tray in the freezer for approximately 1 hour, or until the banana-peanut butter sandwiches have become firm and easy to handle.

        Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and the coconut oil. Microwave the mixture in 30-second intervals, stirring in between each session, until it is smooth and completely melted. If you choose to use vanilla extract, add it now for an enhanced flavor profile.

          Coat the Bites: Remove the frozen banana sandwiches from the freezer. Dip each sandwich into the melted chocolate, ensuring it is fully coated. Gently shake off any excess chocolate to avoid clumping.
