4 slices of rustic bread (sourdough or ciabatta recommended)

2 large ripe tomatoes, thinly sliced

1 cup fresh basil leaves, thoroughly washed and dried

4 oz fresh mozzarella cheese, sliced

3 tablespoons extra-virgin olive oil

1 tablespoon balsamic vinegar

1 clove garlic, finely minced

Salt and pepper to taste

Optional: a pinch of red pepper flakes for added heat

Prepare the Dressing: In a small mixing bowl, whisk together the extra-virgin olive oil, balsamic vinegar, minced garlic, salt, pepper, and red pepper flakes (if using). Allow this mixture to sit for a few minutes to let the flavors combine and develop.

    Toast the Bread: Preheat a non-stick skillet or grill pan over medium heat. Lightly brush each side of the bread slices with some of the prepared dressing. Place the bread in the skillet and toast until golden brown and crispy, which should take about 2-3 minutes per side. Once toasted, remove from the heat and set aside.
