4 medium zucchinis, spiralized

2 cups cherry tomatoes, halved

1 cup fresh mozzarella balls, halved (or diced fresh mozzarella)

1 cup fresh basil leaves, roughly torn

3 tablespoons extra virgin olive oil

2 tablespoons balsamic vinegar (preferably balsamic glaze)

Salt and freshly cracked black pepper, to taste

Optional: 1 teaspoon of dried oregano or Italian seasoning

Prepare the Zoodles: Start by spiralizing the zucchinis to create zoodles (zucchini noodles). If you don't have a spiralizer, a vegetable peeler can also work to slice the zucchinis into thin, long strips. Once prepared, place the zoodles into a large salad bowl, ready for mixing.

    Combine Ingredients: Into the bowl with the zoodles, add the halved cherry tomatoes, fresh mozzarella balls, and the roughly torn basil leaves. These fresh ingredients will create a colorful and flavorful base for your salad.

      Dress the Salad: In a small mixing bowl, combine the extra virgin olive oil and balsamic vinegar (or balsamic glaze). Using a whisk, mix them together until well-blended. Season the dressing with salt, freshly cracked black pepper, and if desired, the dried oregano or Italian seasoning. Pour the dressing over the zoodle mixture in the salad bowl.
