1 lb large raw shrimp, peeled and deveined

1/4 cup mayonnaise

2 tablespoons Sriracha (adjust according to your desired spice level)

1 tablespoon freshly squeezed lime juice

1 teaspoon honey

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon freshly grated ginger

Salt and freshly ground pepper, to taste

1 head of butter lettuce or iceberg lettuce, separated into leaves

1/2 cup shredded carrots

1/4 cup chopped green onions

Sesame seeds, for garnish

Fresh cilantro, for garnish (optional)

Instructions
 

In a medium mixing bowl, whisk together the mayonnaise, Sriracha, freshly squeezed lime juice, and honey until the mixture is smooth and well combined. Set this spicy sauce aside for coating the shrimp.

    Heat the olive oil in a large skillet over medium-high heat. Once hot, add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant and golden but not burnt.

      Carefully add the peeled and deveined shrimp to the skillet. Season them with salt and freshly ground pepper. Sauté the shrimp for approximately 2-3 minutes on each side, or until they turn pink and opaque, indicating they are cooked through.

        Once the shrimp are fully cooked, remove the skillet from heat and transfer the shrimp to the bowl containing the spicy sauce. Gently toss the shrimp in the sauce until each piece is evenly coated.

          To create the lettuce cups, carefully separate the leaves of the butter or iceberg lettuce. Take a generous spoonful of the firecracker shrimp mixture and place it onto the center of each lettuce leaf.
