Ingredients

1 pound fresh green beans, trimmed

2 tablespoons vegetable oil

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons Szechuan peppercorns

1-2 tablespoons chili oil (adjust according to your spice preference)

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sugar

1/4 cup water

1 tablespoon sesame oil

2 tablespoons scallions, chopped (for garnish)

Sesame seeds, for garnish

Instructions

Prepare the Green Beans: Begin by blanching the fresh green beans in a pot of boiling water for approximately 2 minutes, until they are a vibrant green and slightly tender. Drain the beans and immediately immerse them in a bowl of ice water to halt the cooking process. After a few minutes, drain the beans again and set them aside.

Heat the Oil: In a large skillet or wok, pour in the vegetable oil and place it over medium-high heat. Allow the oil to heat until shimmering.

Aromatic Boost: Once the oil is hot, add the minced garlic and ginger to the skillet. Sauté for about 30 seconds, stirring constantly until both are fragrant and lightly golden.

Szechuan Flair: Add the Szechuan peppercorns to the skillet and stir-fry them for another minute, allowing their unique flavor to infuse the oil.

Add the Beans: Carefully toss the blanched green beans into the skillet. Stir well to ensure they are evenly coated with the aromatic mixture.

Spice it Up: Drizzle the chili oil, soy sauce, rice vinegar, and sugar over the green beans. Continue to stir-fry for about 3-4 minutes, ensuring the beans are well-coated and heated throughout.

Finish with Water: Pour in the water and keep stir-frying for an additional 2 minutes. This will create a slight steaming effect, helping the beans retain their crispness while allowing all the flavors to meld beautifully.

Final Touch: Remove the skillet from heat and drizzle sesame oil over the stir-fry. Toss everything together to ensure even distribution of flavors.

Garnish and Serve: Transfer the vibrant stir-fry to a serving dish and generously sprinkle with chopped scallions and sesame seeds for a pop of color. Serve hot as a delightful side dish or over a bed of fluffy steamed rice for a complete meal.
