1 cup salsa (choose mild, medium, or hot based on your preference)

1 cup shredded cheddar cheese

1 cup diced tomatoes (fresh or canned)

1 avocado, diced (for topping)

1/4 cup chopped fresh cilantro (for garnish)

Sour cream (optional, for topping)

Prepare the Peppers: Start by preheating your oven to 375°F (190°C). While the oven warms up, carefully cut the tops off the bell peppers and remove the seeds and membranes without damaging the walls. Arrange the peppers upright in a baking dish; if they wobble, trim the bottoms slightly for stability.

    Cook the Filling: Heat a large skillet over medium heat. Once hot, add the ground beef or turkey, cooking until browned and no longer pink, about 5-7 minutes. Drain any excess fat if necessary. Stir in the taco seasoning, followed by the cooked rice, black beans, corn, and salsa. Mix thoroughly and continue to cook for another 2-3 minutes until everything is heated through.
