Ingredients

2 lbs boneless, skinless chicken breasts

1 cup apple cider (preferably fresh for enhanced flavor)

1/2 cup your favorite barbecue sauce

1/4 cup honey (local honey adds a special touch)

1 medium onion, finely chopped

2 cloves garlic, minced

1 tsp smoked paprika (for a rich, smoky flavor)

1/2 tsp ground cinnamon (to evoke fall warmth)

1/2 tsp salt

1/4 tsp freshly ground black pepper

1/4 tsp cayenne pepper (optional, for a spicy kick)

4-6 whole grain or brioche burger buns

1 cup coleslaw (store-bought or homemade; try adding apples or raisins for a twist)

Fresh apple slices for garnish (optional, to enhance presentation and flavor)

Instructions

Prepare the Chicken: Place the boneless, skinless chicken breasts directly into the crockpot, ensuring they are arranged evenly.

Mix the Sauce: In a medium mixing bowl, combine the apple cider, barbecue sauce, honey, finely chopped onion, minced garlic, smoked paprika, ground cinnamon, salt, black pepper, and cayenne pepper. Use a whisk to blend the ingredients together thoroughly until well integrated.

Add the Sauce: Gently pour the sauce mixture over the chicken in the crockpot, ensuring that the chicken is completely submerged and coated.

Cook: Cover the crockpot with its lid and set it to cook on low for 6-8 hours, or on high for 3-4 hours. The chicken is done when it is fully cooked and easily shreds with a fork.

Shred the Chicken: Once the chicken is cooked, carefully remove it from the crockpot and transfer it to a large bowl. Using two forks, shred the chicken into bite-sized pieces. Return the shredded chicken to the crockpot and mix it well with the remaining sauce.

Assemble the Sandwiches: For an extra touch, lightly toast the burger buns in a toaster or on a grill. Add a generous scoop of the pulled chicken mixture onto the bottom half of each bun.

Top with Coleslaw: Place a hefty scoop of coleslaw on top of the shredded chicken to add a lovely crunch and a refreshing flavor contrast.

Garnish and Serve: If desired, garnish your sandwiches with fresh apple slices for additional flavor and a decorative touch. Place the top half of the bun on each assembled sandwich. Serve immediately to enjoy the cozy essence of fall in each delicious bite!
