Ingredients

2 medium zucchinis, spiralized into noodles

1 cup bell peppers, thinly sliced (a mix of red, yellow, and green for color)

1 cup snap peas, trimmed and cleaned

1 cup carrots, julienned for a crunchy texture

3 cloves garlic, finely minced

1 tablespoon fresh ginger, grated to add warmth

3 tablespoons soy sauce (or tamari for a gluten-free option)

1 tablespoon sesame oil for richness

1 tablespoon vegetable oil for cooking

1 teaspoon red pepper flakes (optional for those who enjoy some heat)

2 green onions, finely sliced for garnish

1 tablespoon sesame seeds for an appealing touch

Instructions

Prep the vegetables: Start by spiralizing the zucchinis using a spiralizer to create long noodle shapes. Next, thinly slice the bell peppers across the width for even pieces and julienne the carrots into thin matchstick shapes. Lastly, trim the ends of the snap peas, discarding any strings. Place all the prepped vegetables aside for easy access.

Heat the oils: In a large wok or a non-stick skillet, add the vegetable oil and sesame oil. Heat over medium-high heat until shimmering but not smoking.

Sauté aromatics: Introduce the minced garlic and freshly grated ginger to the hot oils. Stir-fry them for about 30 seconds, continuously mixing, until they become fragrant. Be careful not to let them burn.

Add veggies: Carefully toss in the sliced bell peppers, trimmed snap peas, and julienned carrots. Stir-fry these vegetables for around 4-5 minutes, allowing them to become tender yet still maintain a crisp bite.

Incorporate zucchini noodles: Gently fold in the spiralized zucchini noodles, ensuring they are evenly distributed throughout the mixture. Drizzle the soy sauce over the stir-fry and sprinkle in the red pepper flakes, if desired. Continue to toss everything together for an additional 2-3 minutes, making sure the zucchini noodles are well-coated and just warmed through.

Plate and garnish: Once cooked, remove the stir-fry from the heat and transfer it to a vibrant serving plate. For a pop of color and flavor, sprinkle the finely sliced green onions and sesame seeds over the top as a fresh garnish.

Serve immediately: Delight in your vibrant and healthy zesty zucchini noodle stir-fry while it’s warm, enjoying every crunchy and flavorful bite!
