1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

1 cup cherry tomatoes, whole

1 cup bell peppers (red and yellow), cut into 1-inch pieces

1 small red onion, cut into wedges

2 tablespoons olive oil

2 teaspoons dried oregano

2 teaspoons garlic powder

Salt and pepper, to taste

8 skewers (if using wooden skewers, soak in water for 30 minutes)

For the Tzatziki Sauce:

1 cup Greek yogurt

1 small cucumber, grated and excess liquid squeezed out

2 cloves garlic, finely minced

1 tablespoon olive oil

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon lemon juice

Salt and pepper, to taste

Marinate the Chicken: In a large mixing bowl, combine the chicken cubes with the olive oil, dried oregano, garlic powder, salt, and pepper. Use your hands or a spatula to mix thoroughly until the chicken is well coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

    Prepare the Tzatziki Sauce: In a separate mixing bowl, add the Greek yogurt, grated cucumber (with excess water squeezed out), minced garlic, olive oil, chopped dill, lemon juice, along with a pinch of salt and pepper. Stir until all the ingredients are combined smoothly. Taste and adjust the seasoning as needed. Cover and chill in the refrigerator for a minimum of 15 minutes to enhance the flavors.
