For the Shrimp:

1 pound shrimp, peeled and deveined

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

Salt and pepper to taste

Juice of 1 lime

For the Guacamole:

2 ripe avocados

1 small onion, finely chopped

1 tomato, diced

1 jalapeño, seeded and minced (optional for heat)

Juice of 1 lime

Salt to taste

Fresh cilantro, chopped (optional for garnish)

For the Tostadas:

8 corn tostada shells

1 cup shredded lettuce

½ cup crumbled queso fresco or feta cheese

Extra lime wedges for garnish

Instructions

Cook the Shrimp:

    - In a medium bowl, combine the peeled and deveined shrimp with olive oil, minced garlic, smoked paprika, salt, pepper, and the juice of half the lime. Mix well to evenly coat the shrimp and allow the mixture to marinate for about 10 minutes.

      - Heat a non-stick skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer and cook for approximately 2-3 minutes on each side. The shrimp should turn pink and opaque when cooked through. Remove from heat and set aside.

        Make the Guacamole:

          - Halve the ripe avocados, discard the pits, and scoop the flesh into a mixing bowl. Use a fork to mash the avocados until they are creamy yet slightly chunky for texture.

            - Gently fold in the finely chopped onion, diced tomato, and minced jalapeño if you prefer a kick of heat. Squeeze the juice of the remaining lime over the mixture and sprinkle with salt to taste. If desired, mix in chopped fresh cilantro for added flavor. Set the guacamole aside.

              Assemble the Tostadas:

                - Take a tostada shell and generously spread a layer of guacamole on top.

                  - Next, layer the shredded lettuce evenly over the guacamole followed by a portion of the cooked shrimp.

                    - Finish by sprinkling crumbled queso fresco or feta cheese on top of each tostada for a delightful creamy finish.

                      Serve:

                        - Arrange the assembled tostadas on a serving platter and garnish with extra lime wedges on the side for squeezing over the top at serving. Serve immediately to enjoy the vibrant flavors and textures of this refreshing dish!
