2 cups cooked jasmine rice (day-old preferred for optimal texture)

1 cup pork tenderloin, finely cubed

2 tablespoons soy sauce

1 tablespoon oyster sauce

2 tablespoons vegetable oil (divided)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup mixed vegetables (frozen peas, diced carrots, and corn)

2 large eggs, beaten

3 green onions, chopped

Salt and pepper, to taste

Optional: sesame oil for drizzling

Prepare the Ingredients: If starting with fresh rice, cook the jasmine rice according to the package instructions, ensuring it is not overly moist. For the best flavor and texture, it's recommended to use rice that has been cooked and refrigerated overnight. Prepare your other ingredients: chop the pork tenderloin into small cubes, finely chop the onion, mince the garlic, and slice the green onions. Set the mixed vegetables aside, and whisk the two eggs in a bowl until well combined.

    Cook the Pork: In a large skillet or wok, add 1 tablespoon of vegetable oil and heat it over medium-high heat. Once the oil is hot, add the cubed pork and stir-fry until it is browned and cooked through, approximately 5-7 minutes. Once cooked, remove the pork from the skillet and set it aside on a plate.

      Sauté Aromatics: Using the same skillet, add the remaining tablespoon of oil. Once heated, add the chopped onion and minced garlic. Sauté for about 2-3 minutes, or until the onion becomes translucent and fragrant.

Taste and adjust seasoning with salt and pepper as needed. For an extra layer of flavor, optionally drizzle a small amount of sesame oil over the rice.
