Ingredients

1 cup water

1/2 cup unsalted butter

1 cup all-purpose flour

4 large eggs

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 teaspoon almond extract (optional for added flavor)

Powdered sugar, for dusting

Optional: whipped cream or fruit preserves for delightful filling

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking.

Prepare the Dough: In a medium saucepan, combine the water and butter. Heat over medium heat until the mixture reaches a rolling boil. Once boiling, promptly remove the saucepan from the heat. Add in the flour and salt, stirring vigorously until everything is well blended. Return the pan to low heat for about 2-3 minutes, stirring continuously until the dough pulls away from the sides of the pan and forms a cohesive ball.

Incorporate the Eggs: Transfer the warm dough to a mixing bowl. Allow it to cool slightly for about 5 minutes. Once slightly cooled, add the eggs one at a time, mixing thoroughly after each addition until the dough becomes smooth and glossy. Stir in the vanilla extract and almond extract, if you’re using it for a hint of extra flavor.

Shape the Puffs: Using either a spoon or a pastry bag fitted with a large round tip, drop tablespoon-sized portions of the dough onto the prepared baking sheet. Be sure to space them about 2 inches apart to allow for expansion during baking.

Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the puffs are a golden brown and sound hollow when tapped. Be mindful not to open the oven door during baking, as this can affect the puffing process.

Cool and Fill: Remove the baked puffs from the oven and let them cool on a wire rack. Once they have cooled completely, you can fill them with whipped cream or fruit preserves. To do this, use a small knife to carefully make a slit in the side or bottom of each puff.

Dust and Serve: Just before serving, lightly dust the nun’s puffs with powdered sugar for a beautiful presentation. These delightful treats are best enjoyed warm or at room temperature!
