Easy Garlic Butter Shrimp with Zucchini Noodles

4 medium zucchinis, spiralized into noodles

4 tablespoons unsalted butter, divided

4 cloves garlic, finely minced

1 teaspoon red pepper flakes (adjust to taste)

Salt and freshly ground black pepper, to taste

Juice of 1 fresh lemon

1/4 cup fresh parsley, finely chopped

Grated Parmesan cheese, for serving (optional)

Prepare the Zucchini Noodles: Start by spiralizing the zucchinis using a spiralizer or a julienne peeler to create thin, noodle-like strands. Place the noodles on a few layers of paper towels to soak up excess moisture, ensuring they stay crisp during cooking.

    Cook the Shrimp: In a large skillet, melt 2 tablespoons of unsalted butter over medium-high heat. Once melted and sizzling, add the shrimp to the pan in a single layer, seasoning them with salt, black pepper, and half of the red pepper flakes. Sauté the shrimp for 2-3 minutes on one side, watching for them to turn pink and just firm to the touch. Flip them over and cook for an additional 1-2 minutes until opaque. Remove the cooked shrimp from the skillet and set aside on a plate.

      Sauté Garlic: Using the same skillet, lower the heat to medium and add the other 2 tablespoons of butter. Once the butter has melted, add the minced garlic, sautéing for about 30 seconds or until fragrant and golden, being careful to prevent burning as it can turn bitter.

        Add Zucchini Noodles: Toss the spiralized zucchini noodles into the skillet with the fragrant garlic butter. Sauté for 3-4 minutes, stirring gently but frequently, until the noodles are tender yet retain a slight crunch for delightful texture.
