Ingredients

8 oz (225g) pasta (fusilli or penne)

1 cup (250g) ricotta cheese

1 cup (250g) cottage cheese

1/2 cup (120ml) vanilla yogurt

1 cup (150g) mixed berries (strawberries, blueberries, raspberries)

1 medium banana, sliced

1 cup (100g) shredded mozzarella cheese

1/4 cup (60g) honey or maple syrup

1 tsp vanilla extract

1/2 tsp ground cinnamon

Pinch of salt

Fresh mint leaves for garnish (optional)

Instructions

Preheat and Prepare: Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish with cooking spray or softened butter to prevent sticking.

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta and set it aside to cool slightly.

Make the Cheese Mixture: In a spacious mixing bowl, combine the ricotta cheese, cottage cheese, vanilla yogurt, honey (or maple syrup), vanilla extract, ground cinnamon, and a pinch of salt. Use a whisk or spatula to mix until all ingredients are well incorporated and smooth.

Combine Ingredients: Gently fold the cooked pasta, mixed berries, and banana slices into the cheese mixture. Ensure that all the ingredients are evenly coated with the creamy mixture.

Transfer to Baking Dish: Pour the pasta and cheese mixture into the prepared baking dish. Spread it out evenly to ensure uniform baking.

Add the Topping: Generously sprinkle the shredded mozzarella cheese on top of the pasta mixture, creating an even layer to achieve a bubbly, golden crust.

Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese on top is melted, bubbly, and lightly golden.

Cool and Serve: Once baked, remove the dish from the oven and allow it to cool for a few minutes. If desired, garnish with fresh mint leaves for a pop of color and flavor. Serve warm and enjoy this delightful blend of savory and fruity flavors!
