2 cups cooked chicken, shredded or diced (using rotisserie chicken is a great shortcut!)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

4 large flour tortillas

1 tablespoon olive oil

1 teaspoon taco seasoning (optional, for added flavor)

Salt and pepper to taste

1 small bell pepper, finely chopped (optional for crunch)

1 small onion, finely chopped (optional for flavor)

For the Homemade Salsa:

2 large ripe tomatoes, diced

1/2 small red onion, finely chopped

1 clove garlic, minced

1 small jalapeño, seeded and diced (optional for a spicy kick)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

Prepare the Salsa:

    - In a medium bowl, mix together the diced tomatoes, finely chopped red onion, minced garlic, jalapeño (if using), and chopped cilantro.

      - Squeeze fresh lime juice over the mixture and sprinkle with salt to taste.

        - Stir well to combine and let the salsa sit for at least 15 minutes to let the flavors meld together beautifully.

          Cook the Chicken Filling:

            - Heat a large skillet over medium heat and add the olive oil.

              - Once the oil is hot, add the chopped onion and bell pepper (if using). Sauté these for about 3-4 minutes until they soften and become fragrant.

                - Add in the shredded chicken along with the taco seasoning (if using), salt, and pepper. Mix everything thoroughly and cook for an additional 2-3 minutes until everything is heated through.
