Easy BBQ Chicken Quesadillas for Families

2 cups cooked chicken, shredded

1 cup barbecue sauce (your favorite brand)

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

4 large flour tortillas

1 small red onion, thinly sliced

1 bell pepper (any color), sliced

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sour cream and guacamole (for serving)

Prepare the Chicken: In a bowl, combine the shredded chicken and barbecue sauce. Stir well until the chicken is evenly coated in the sauce, ensuring every piece is flavorful.

    Sauté Vegetables: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced red onion and bell pepper to the skillet. Season with salt and pepper to enhance the flavors. Sauté the vegetables for about 5-7 minutes, stirring occasionally, until they become soft and fragrant. Once done, remove them from the skillet and set them aside on a plate.

      Assemble the Quesadillas: In the same skillet, add another tablespoon of olive oil and heat it over medium. Place one tortilla in the skillet and start layering half of it with a generous amount of the barbecue chicken mixture. Top the chicken with the sautéed vegetables, followed by a mix of mozzarella and cheddar cheese. Carefully fold the tortilla over to create a half-moon shape.

        Cook Quesadillas: Cook the quesadilla for approximately 3-4 minutes on one side, or until it turns golden brown and the cheese begins to melt. Flip it over and cook for another 3-4 minutes on the other side. Remove the cooked quesadilla from the skillet and repeat the process with the remaining tortillas.

          Slice and Serve: Allow the quesadillas to cool for a minute before cutting them into wedges with a sharp knife. Serve them warm, garnished with freshly chopped cilantro, and alongside small bowls of sour cream and guacamole for dipping.
