1 cup uncooked jasmine rice

2 cups vegetable broth

1 cup fresh green beans, trimmed and cut into 1-inch pieces

1/2 cup dill pickles, finely chopped

1/4 cup fresh dill, finely chopped

1/4 cup red onion, thinly sliced

1 tablespoon olive oil

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

Salt and black pepper to taste

Optional: Crumbled feta cheese for garnish

Instructions
 

Cook the Rice: In a medium saucepan, bring the vegetable broth to a rolling boil. Once boiling, stir in the jasmine rice, then reduce the heat to low. Cover the saucepan with a lid and let it simmer for approximately 15 minutes or until the rice is tender and all the liquid has been absorbed. Remove from heat and fluff the rice with a fork. Set aside to cool slightly.

    Prepare the Dilly Beans: In a separate pot, fill it with water and bring it to a boil. Carefully add the trimmed green beans and blanch them for about 3-4 minutes. You want them to be bright green and just tender. Immediately drain the beans and plunge them into a bowl of ice water to halt the cooking process. Once cooled, drain again and set aside.

      Make the Dressing: In a small mixing bowl, whisk together the olive oil, apple cider vinegar, garlic powder, and season with salt and black pepper to your liking. Taste the dressing and adjust the seasoning if necessary.
