400g firm tofu, pressed and cubed

2 tablespoons cornstarch

3 tablespoons vegetable oil, divided

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

1 cup broccoli florets

1 cup snap peas, trimmed

1 carrot, julienned

2 green onions, sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 tablespoons low-sodium soy sauce

1 tablespoon sesame oil

2 tablespoons sesame seeds

Cooked rice or quinoa, for serving

Prepare the Tofu: Begin by pressing the tofu using a tofu press or by wrapping it in a clean kitchen towel and placing a heavy object on top to eliminate excess moisture. Once well pressed, cut the tofu into bite-sized cubes and toss them in cornstarch until they are evenly coated. This will create a delightful crunchy texture when cooked.

    Cook the Tofu: In a large non-stick pan or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Once hot, add the cornstarch-coated tofu cubes and sauté them for 6-8 minutes, turning every few minutes until each side is golden brown and crispy. Once done, carefully remove the tofu from the pan and set it aside on a plate.

      Sauté the Vegetables: In the same pan, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, stirring continuously for about 30 seconds until fragrant. Next, toss in the sliced bell peppers, broccoli florets, snap peas, and julienned carrot. Stir-fry the colorful veggies for 4-5 minutes, cooking until they are vibrant and tender yet still maintain a crisp bite.
