4 large whole wheat tortillas

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 ripe avocado, sliced

1 cup shredded red cabbage

1/2 cup freshly chopped cilantro

1/4 cup finely diced red onion

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Juice of 1 lime

1/2 cup Greek yogurt or sour cream, for serving

Prepare the Filling: In a spacious mixing bowl, thoroughly combine the rinsed black beans, corn, diced red bell pepper, halved cherry tomatoes, sliced avocado, shredded red cabbage, chopped cilantro, and diced red onion. Mix well until evenly distributed.

    Season the Mixture: Evenly sprinkle the ground cumin, smoked paprika, salt, and pepper over the vegetable filling. Squeeze the fresh lime juice over the entire mixture, and gently toss it together until all ingredients are well coated with the seasonings.

      Assemble the Wraps: Lay one whole wheat tortilla flat on a clean surface. Spoon a generous portion of the prepared veggie filling into the center of the tortilla, making sure to leave space at the edges to prevent spills when wrapping.
