Ingredients

250g halloumi cheese, sliced into 1 cm thick pieces

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1 tablespoon dried oregano

1 tablespoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1/4 cup fresh parsley, finely chopped (for garnish)

Olive oil, for frying

Lemon wedges, for serving

Instructions

Prepare the Halloumi: Begin by cutting the halloumi cheese into slices, each approximately 1 cm thick. Use a paper towel to gently pat the slices dry, absorbing any excess moisture. This step is essential to ensure that the breading adheres effectively during frying.

Set Up Breading Station: Organize your ingredients in three shallow dishes. In the first, combine the all-purpose flour with a pinch of salt and pepper. Pour the beaten eggs into the second dish. In the third dish, mix the panko breadcrumbs with the dried oregano, garlic powder, smoked paprika, and an additional pinch of salt and pepper for extra flavor.

Coat the Halloumi: Take each slice of halloumi and first dip it into the seasoned flour, ensuring it is completely coated. Next, transfer the slice to the beaten egg, allowing any excess egg to drip off. Finally, press the halloumi into the panko breadcrumb mixture, ensuring an even and generous coating adheres to the surface.

Heat the Oil: In a large skillet, pour in enough olive oil to cover the bottom and heat it over medium heat. You can test the temperature by dropping in a few breadcrumbs; they should sizzle upon contact.

Fry the Halloumi: Once the oil is hot, carefully lay the breaded halloumi slices into the skillet. Fry them for about 2-3 minutes on each side, or until they achieve a beautiful golden brown and crispy texture. Be cautious not to overcrowd the pan; if needed, work in batches for the best results.

Drain Excess Oil: After frying, transfer the crispy halloumi slices onto a plate lined with paper towels. This will help absorb any excess oil, keeping your dish light and delightful.

Serve: Arrange the golden-brown fried halloumi on a serving platter. Sprinkle the freshly chopped parsley over the top for a burst of color and freshness. Serve with lemon wedges on the side to add a zesty touch to each bite. Enjoy this crispy delight as an appetizer, snack, or as a vibrant addition to a salad!
