Ingredients

4 large flour tortillas

8 oz cream cheese, softened to room temperature

1 cup shredded sharp cheddar cheese

1/2 cup crumbled cooked bacon (approximately 4 slices)

1/4 cup pickled jalapeños, chopped (adjust according to your heat preference)

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/2 teaspoon smoked paprika

1 cup panko breadcrumbs

2 large eggs, beaten

Vegetable oil, for frying

Fresh cilantro leaves, for garnish (optional)

Instructions

Prepare the Filling: In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled bacon, chopped pickled jalapeños, garlic powder, onion powder, and smoked paprika. Stir together until all the ingredients are fully incorporated, forming a creamy filling. Set the mixture aside for later use.

Assemble the Wraps: Place a tortilla flat on a clean, dry surface. Take about a quarter of the jalapeño popper filling and spread it evenly in a line along the center of the tortilla. Fold the sides of the tortilla inward over the filling, then roll it tightly from one end to the other to form a secure wrap. Repeat this process with the remaining tortillas and filling until all wraps are prepared.

Coat the Wraps: Create a breading station by placing the panko breadcrumbs in a shallow dish, ensuring they are evenly spread. In another shallow dish, pour the beaten eggs. Carefully dredge each wrap first in the egg wash, making sure they are completely coated, then roll them in the panko breadcrumbs, pressing gently to ensure they stick well. This coating will provide a satisfying crunch once fried.

Fry the Wraps: In a large skillet, heat approximately 1/2 inch of vegetable oil over medium heat until it reaches a sizzle. Gently add the coated wraps to the hot oil, seam side down. Fry the wraps in batches to avoid overcrowding the pan. Cook for about 3-4 minutes on each side, or until they are golden brown and crispy. Use tongs to carefully turn the wraps, ensuring even cooking and a beautiful color.

Drain and Cool: Once the wraps are perfectly crispy and golden, remove them from the skillet using tongs. Transfer the wraps to a plate lined with paper towels to absorb any excess oil and allow them to cool slightly.

Serve: Slice the crunchy jalapeño popper wraps diagonally for a beautiful presentation and arrange them on a serving platter. If desired, garnish with fresh cilantro leaves for added color and flavor. Serve warm alongside a generous side of ranch dressing or your favorite dipping sauce for an extra flavor boost.
