Ingredients

1 block (14 oz) firm tofu, drained and pressed

3 tablespoons cornstarch

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust to taste for spice level)

1 teaspoon salt

2 tablespoons vegetable oil

Zest and juice of 2 limes

1 tablespoon soy sauce

1 tablespoon maple syrup or agave nectar

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Tofu: Begin by draining the tofu to remove excess moisture. Wrap the tofu block in a clean kitchen towel and place a heavy object (like a skillet) on top for 15-20 minutes. This pressing process helps achieve a firmer texture. Once pressed, slice the tofu into bite-sized cubes, ensuring uniform pieces for even cooking.

Coat the Tofu: In a large mixing bowl, mix together the cornstarch, paprika, garlic powder, onion powder, cayenne pepper, and salt to create a spice coating. Carefully add the tofu cubes to the bowl and gently toss until every cube is evenly coated with the cornstarch mixture. This step is key for a satisfying crunch!

Pan-Fry the Tofu: Heat the vegetable oil in a non-stick frying pan over medium-high heat. When the oil is shimmering, carefully place the coated tofu cubes in a single layer in the pan, making sure not to overcrowd them. Depending on your pan size, you may need to fry them in batches. Cook for about 3-4 minutes on each side until they are golden brown and crispy. Once done, transfer the crispy tofu to a plate lined with paper towels to drain any excess oil.

Prepare the Sauce: In a small bowl, whisk together the lime zest, lime juice, soy sauce, and maple syrup until well combined. Taste and adjust the sweetness or saltiness if necessary to suit your preference.

Combine & Serve: Pour the zesty chili-lime sauce over the crispy tofu cubes and gently toss the mixture until the tofu is thoroughly coated. Transfer to a serving platter and garnish with a generous sprinkle of freshly chopped cilantro. Serve piping hot alongside lime wedges for an extra burst of flavor.
