Crunchy BBQ Tofu Power Bowl

1 block (14 oz) firm tofu, pressed and drained

1/4 cup barbecue sauce (your choice of store-bought or homemade)

1 tablespoon cornstarch

2 tablespoons olive oil

1 cup cooked quinoa (or substitute with brown rice)

1 cup shredded red cabbage

1 cup diced cucumber

1 cup cherry tomatoes, halved

1 ripe avocado, sliced

1/4 cup fresh cilantro, finely chopped

2 tablespoons green onions, thinly sliced

Salt and freshly cracked pepper to taste

Optional: lime wedges for serving

Prepare the Tofu: Preheat your oven to 400°F (200°C). Slice the pressed tofu into bite-sized cubes. Place the cubes in a mixing bowl and toss them with cornstarch until evenly coated.

    Bake the Tofu: Line a baking sheet with parchment paper to prevent sticking. Spread the cornstarch-coated tofu cubes in a single layer on the baking sheet. Drizzle 1 tablespoon of olive oil over the tofu and season with salt and pepper. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the tofu is golden brown and crunchy.

      Glaze with BBQ Sauce: Once the tofu is done baking, remove it from the oven. Transfer the cubes to a mixing bowl and drizzle with the barbecue sauce. Toss gently until the tofu is thoroughly coated. Return the sauce-coated tofu back to the baking sheet and bake for an additional 10 minutes to allow the sauce to caramelize.

        Prepare the Quinoa: While the tofu is baking, cook the quinoa according to the package instructions (typically, use 1 part quinoa to 2 parts water). Add a pinch of salt for flavor. Once cooked, fluff the quinoa with a fork and set aside.

          Assemble the Bowl: In a large serving bowl, combine the fluffy quinoa, shredded red cabbage, diced cucumber, cherry tomatoes, and sliced avocado. Gently mix to distribute the ingredients evenly.

            Add the Tofu: Carefully place the crunchy BBQ tofu cubes on top of the quinoa and vegetable mixture, creating a vibrant display.

              Garnish: Finish by sprinkling the power bowl with fresh cilantro and green onions. Adjust seasoning with additional salt and pepper if desired.
