Ingredients

4 cups frozen sweet corn (or 6 ears of fresh corn, kernels removed)

1 lb ham steak, diced into bite-sized pieces

3 medium potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1/2 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Optional: Crusty bread or crackers for serving

Instructions

Prep the Ingredients: If you are using fresh corn, carefully remove the kernels from the cobs. Dice the ham steak into small, bite-sized pieces. Peel and dice the potatoes, and finely chop the onion and garlic to ensure even cooking.

Sauté the Aromatics: In a large skillet over medium heat, pour in the olive oil. Once the oil is shimmering, add the chopped onion. Sauté for about 5 minutes until the onion becomes translucent. Then, stir in the minced garlic and continue to sauté for an additional minute, allowing it to become fragrant without burning.

Combine in the Crockpot: Transfer the sautéed onion and garlic mixture into a crockpot. Next, add the frozen sweet corn (or the prepared fresh corn), diced potatoes, and diced ham. Pour in the chicken broth, and then sprinkle in the dried thyme, smoked paprika, salt, and pepper. Gently stir all ingredients together until well combined.

Cook Low & Slow: Cover the crockpot with its lid and set the heat to low. Let it cook for 6-8 hours or on high for 3-4 hours, until the potatoes are tender and flavors meld beautifully.

Add the Cream: About 30 minutes before you are ready to serve, stir in the heavy cream. This will create a rich and creamy consistency. Leave the lid on during this time to allow the chowder to thicken slightly.

Taste and Adjust: Before serving, taste the chowder and adjust the seasoning as needed with more salt and pepper to suit your preference.

Serve: Ladle the hearty chowder into individual bowls. Garnish with a sprinkle of fresh chopped parsley for a burst of color and flavor. Serve with crusty bread or crispy crackers alongside for a delightful meal.
