14 oz firm tofu, drained and pressed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cayenne pepper (adjust to taste for spice preference)

Salt and freshly ground black pepper, to taste

1 bell pepper (any color), sliced into thin strips

1 medium onion, sliced into rings

Juice of 1 lime

4 large tortillas (flour or corn)

1 ripe avocado, sliced

Fresh cilantro, finely chopped for garnish

Salsa or hot sauce (optional, for serving)

Instructions
 

Prepare the Tofu: Start by pressing the firm tofu to eliminate excess moisture, allowing it to sit under a heavy object (like a skillet or a plate) for at least 15 minutes. After pressing, cut the tofu into bite-sized cubes.

    Marinate the Tofu: In a large mixing bowl, whisk together the olive oil, smoked paprika, ground cumin, garlic powder, onion powder, cayenne pepper, and a pinch of salt and pepper. Add the cubed tofu to the bowl and gently toss until each piece is well-coated in the marinade. Cover and let it sit for at least 15 minutes to absorb the flavors.

      Cook the Tofu: Heat a non-stick skillet over medium-high heat. Once hot, add the marinated tofu cubes in an even layer. Cook for 10-15 minutes, using a spatula to turn the cubes every few minutes until they are golden brown and crispy on all sides.

        Sauté the Vegetables: In the same skillet, if necessary, drizzle in a bit more olive oil. Add the sliced bell pepper and onion, stirring frequently. Sauté for approximately 5-7 minutes until the vegetables are tender and have developed some charred edges. Squeeze the lime juice over the sautéed veggies and toss to combine.

          Assemble the Wraps: Warm the tortillas by briefly heating them in a dry skillet for a few seconds on each side, or microwave them for about 20 seconds to make them pliable. Place an even layer of the crispy tofu, sautéed bell peppers, and onions in the center of each tortilla. Top with slices of avocado and a generous sprinkle of fresh cilantro.

            Roll and Serve: Tightly roll each tortilla, folding in the edges to secure the filling. Cut in half if desired and serve immediately, accompanied by salsa or hot sauce for an extra kick if you like.
