Ingredients

4 medium Yukon Gold potatoes, thinly sliced

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and freshly cracked pepper, to taste

1 cup grated Parmesan cheese

1 cup shredded cheddar cheese

1 cup black beans, rinsed and drained

1 jalapeño, thinly sliced (seeds removed for milder flavor)

1 ripe avocado, diced

1/2 cup sour cream

Fresh cilantro, chopped (for garnish)

1 lime, cut into wedges

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C), allowing it ample time to reach the desired temperature.

Prepare the Potatoes: In a large mixing bowl, combine the thinly sliced Yukon Gold potatoes with the olive oil, garlic powder, onion powder, smoked paprika, and a generous pinch of salt and pepper. Toss everything together until the potato slices are thoroughly coated with the oil and seasonings.

Bake the Potatoes: Spread the seasoned potato slices in a single layer on a large baking sheet or an oven-safe skillet. Bake in the preheated oven for 25-30 minutes, flipping the slices halfway through the cooking time. Bake until the potatoes are golden brown and crispy on the edges.

Add Cheese and Toppings: Once the potatoes are perfectly crispy, remove them from the oven. Generously sprinkle the grated Parmesan cheese over the potato slices, followed by an even layer of shredded cheddar cheese. Top it all off with the rinsed black beans and sliced jalapeño.

Broil: Return the skillet or baking sheet to the oven. Switch to the broiler setting on high and broil for an additional 3-5 minutes, watching closely to prevent burning. The cheese should become bubbly and oozy during this step.

Garnish and Serve: Carefully remove the skillet from the oven and allow it to cool slightly. Top your crispy nacho masterpiece with diced avocado and a generous dollop of sour cream. Finish with a sprinkle of fresh, chopped cilantro and serve it with lime wedges on the side.

Dig In: Enjoy your delicious Crispy Parmesan Potato Nacho Skillet while it’s hot, savoring the heavenly combination of cheesy, crispy goodness with each scoop!
