1 cup panko breadcrumbs

1/2 cup freshly grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (or 1 tablespoon fresh herbs, finely chopped)

1/2 teaspoon smoked paprika (optional for a deeper flavor)

Salt and freshly ground black pepper to taste

1/2 cup all-purpose flour

2 large eggs

2 tablespoons Dijon mustard

1/4 cup olive oil (for frying)

Fresh lemon wedges (for serving)

Preheat the Oven: Set your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper or a silicone baking mat to prevent sticking.

    Mix the Coating: In a shallow dish, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried Italian herbs, smoked paprika (if using), salt, and pepper. Stir the mixture thoroughly until evenly combined, then set it aside.

      Prepare the Breading Station:

        - In one shallow dish, pour in the flour.

          - In a second shallow dish, crack the eggs and whisk them together with the Dijon mustard until the mixture is smooth and well incorporated.

            Bread the Cod Fillets:

              - Take each cod fillet and season it on both sides with salt and pepper.

                - Begin by dredging the fillet in the flour, making sure to shake off any excess.

                  - Next, dip the floured fillet into the egg mixture, ensuring it is completely coated.
