4 skinless, boneless cod fillets (approximately 6 oz each)

1 cup panko breadcrumbs

2 large eggs, beaten

2 tbsp olive oil

1/2 cup Greek yogurt

2 tbsp mayonnaise

1 tbsp Dijon mustard

1 tbsp fresh lemon juice

1 clove garlic, minced

1/4 cup fresh parsley, finely chopped

2 tbsp fresh dill, finely chopped

    Prepare the Cod Fillets: Gently pat the cod fillets dry using paper towels—this helps achieve a crispy texture. Season both sides of the fillets generously with salt and pepper.

      Set Up the Breading Station: Arrange three shallow dishes in a row. In the first dish, combine the all-purpose flour with garlic powder and paprika. In the second dish, beat the eggs until well mixed. Fill the third dish with panko breadcrumbs.
