Ingredients

1 lb fresh green beans, trimmed

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp black pepper

1/2 tsp salt

2 large eggs

1/4 cup all-purpose flour

Olive oil spray (or vegetable oil for frying)

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a large baking sheet with parchment paper to prevent sticking and to ensure easy cleanup.

Prepare the Green Beans: Rinse the fresh green beans under cold water and thoroughly pat them dry with a clean kitchen towel. Ensuring they are completely dry is crucial for achieving that perfect, crispy texture.

Make the Breading Mixture: In a medium-sized mixing bowl, combine the panko breadcrumbs, grated Parmesan cheese, minced garlic, onion powder, smoked paprika, black pepper, and salt. Stir the mixture well until all ingredients are evenly incorporated.

Set Up the Dredging Station: Arrange three separate shallow bowls on your countertop. In the first bowl, pour in the all-purpose flour. In the second bowl, crack and beat the large eggs. In the third bowl, add the breadcrumb and cheese mixture.

Dredge the Green Beans: Grab each green bean one by one and start the dredging process. First, coat it in the flour, shaking off any excess. Next, dip it into the beaten eggs, letting any extra egg drip back into the bowl. Finally, roll the green bean in the breadcrumb mixture, pressing it gently to ensure the coating sticks well. Once coated, place each green bean on the prepared baking sheet.

Spray with Olive Oil: After all the green beans are coated, spray them lightly with olive oil using a cooking spray. This will help them to achieve a beautiful golden-brown color and extra crispiness as they bake.

Bake: Slide the baking sheet into the preheated oven and bake for 20-25 minutes. Be sure to flip the green beans halfway through for even cooking, until they are golden and crispy.

Serve: Once baked, remove the green bean fries from the oven and allow them to cool for a couple of minutes before serving. Enjoy them immediately with your favorite dipping sauce, such as marinara sauce or ranch dressing for a delightful crunch.
