Crispy Falafel Veggie Wrap

1 cup dried chickpeas (soaked overnight)

1 small onion, roughly chopped

3 cloves garlic

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon baking powder

Salt and pepper, to taste

1/2 cup fresh parsley, chopped

1/2 cup fresh cilantro, chopped

Oil for frying (vegetable or olive oil)

For the Wrap:

4 large whole wheat or spinach tortillas

2 cups shredded lettuce

1 cup diced tomatoes

1/2 cup cucumber, diced

1/4 cup red onion, thinly sliced

1 avocado, sliced

1/2 cup tahini sauce or garlic yogurt sauce

Prepare the Falafel Mixture:

    - After soaking the chickpeas overnight, drain and rinse them thoroughly. In a food processor, combine the chickpeas, chopped onion, garlic cloves, ground cumin, ground coriander, baking powder, salt, pepper, chopped parsley, and chopped cilantro. Pulse the mixture until it is coarsely blended—be careful not to purée it to maintain texture. Transfer the mixture to a bowl and refrigerate it for approximately 30 minutes to firm up.

      Form the Falafel Balls:

        - Once the mixture has chilled, scoop out about 2 tablespoons of the falafel mix and roll it into a ball or flatten it into a patty, aiming for about 1 inch in diameter. Place each formed falafel on a plate lined with parchment paper to prevent sticking.

          Fry the Falafel:
