1 teaspoon paprika

2 large eggs

1 cup shredded coconut (sweetened or unsweetened, depending on your preference)

1 cup panko breadcrumbs

½ cup vegetable oil (for frying)

Fresh cilantro, chopped (for garnish)

Prepare the Breading Stations: Set up three shallow dishes. In the first, combine the all-purpose flour, garlic powder, onion powder, paprika, salt, and black pepper, mixing well. In the second dish, beat the eggs until smooth. In the third dish, blend the shredded coconut with the panko breadcrumbs, ensuring they are evenly mixed together for a crunchy coating.

    Bread the Chicken: Take each piece of chicken and first coat it in the flour mixture, shaking off any excess flour. Then, dip it into the beaten eggs, allowing any extra egg to drip back into the dish. Finally, roll the chicken in the coconut and panko mixture, pressing gently to help the coating adhere well. Continue this process until all the chicken pieces are fully coated.

      Heat the Oil: Pour the vegetable oil into a large skillet over medium-high heat. You’ll want enough oil to create a shallow layer covering the bottom of the skillet (approximately ¼ inch deep).
